Fermentation is an anaerobic process that an organism uses to change a carbohydrate into an acid, alcohol, or in some cases, a gas. The two types of fermentation are ethanol and lactic acid. In ethanol fermentation, the fermentation used for wine, sugar is broken down into ethanol and carbon dioxide by yeast. The production of yogurt, cheese, and beer also requires fermentation.
