Different Classes of Proteins: Storage - Albumin

The separated egg white in the dish on the right contains the protein ovalbumin (OVA), a storage protein which is water-soluble; ovalbumin makes up half of the proteins found in egg white. Albumin storage proteins are also found in blood (serum albumin) and milk (lactalbumin).
