Different types of carbohydrates: starch

A carbohydrate is a sugar, or one of its dimers, or polymers (monosaccharides, disaccharides, and polysaccharides). Carbohydrates serve as fuel and building material. Starch is a polymer of glucose monomers. Plants synthesize starch to stockpile surplus glucose. Rice is a major source of starch in the human diet.
