Ethylene

Ethylene is associated with fruit ripening. It is a gaseous hormone produced from methionine. It is a three-step process where ATP and water are added to methionine forming ACC. Oxygen is then added to create ethylene. This hormone also helps in flower formation and seed germination. In this sweet plantain, ethylene is in the process of ripening the fruit; as it turned it from completely green to almost totally brown.
